Bavarian Hefeweizen

All Grain version

Malt:
4.6 lbs 2-row malt
4 lb White Wheat Malt
Hops:
0.25 ounces Hallertau (90 min)
0.75 ounces Hallertau (40 min)
1.1 ounces Tettnanger (25 min)
0.8 ounces Tettnenger (Boil end)
Yeast:
WLP380 - Hefeweizen IV Yeast


Coopers Wheat Beer

Description: A light wheat beer with the refreshing tartness of Northern German wheat beers. Very fast and easy to make.

1 can Coopers Brewmaster Series Wheat Beer Kit
1/2 lb Corn Sugar
1 1/2 lb Wheat/Pale Dry Malt Extract
1 pkg Coopers Wheat Beer Yeast or White Labs American Hefewizen (WLP320)
Coopers Carbonation drops (priming)

1. Mix corn sugar and dry malt extract in at least 2 litres of water. Heat to 160-180F (48-58C). Hold for 15 minutes.
2. Remove from heat and mix in Coppers Brewmaster Series Wheat Beer kit.
3. Cool wort in pot to room temperature. Transfer into fermenter. Aerate well, then top up to 5 gallons if necessary.
4. Pitch yeast when temperature is <80F (24C).
5. Ferment at 68-74F (18-21C).


Very Berry Honey Wheat Ale

Perfect for summer or for the fruit beer lover. A light refreshing fruit/wheat beer recipe. This beer won 1st place (fruit category) at the 1996 Brew Debut Homebrewing Competition.

6.6 lbs Coopers Wheat Malt Extract
1 lb 10L Crystal malt
1 lb Clover Honey
1/4 lb Flaked Wheat
1 1/2 oz Styrian Golding Hops (15 min)
1 oz Liberty Hops (5 min)
3 oz Raspberry Extract
1 vial White Labs WLP001 California Ale Yeast
1 cup Cooper Light Dry Malt Extract (priming)

Steep Crystal malt 15-20 minutes at 150-180F, then remove. Mix in flaked wheat and malt extract, bring to boil. Add Styrian Goldings. Boil 15 minutes. Add Liberty hops and honey with 5 minutes remaining in boil. Cool to fermentation temperature, transfer to fermenter, straining out the flaked wheat and hops and add yeast. At bottling time, transfer to bottling vessel, thoroughly mixing in DME and raspberry extract. Condition 2-4 weeks.
