White Labs Native Yeast Program
White Labs helps winemakers use native yeasts found in their
vineyards and wineries — a process that creates ideal estate
wines.
We have partnered with Prahl Biolab in Denmark, which has worked
with French and other European wineries to isolate, clean and
purify native yeasts. This process allows wineries to use yeast from
past spontaneous fermentations in a more controlled, consistent and
reliable manner.
White Labs supplies all the containers and training necessary to
collect the yeast. Prahl will isolate the yeast, evaluate its
characteristics and develop a genetic footprint. White Labs will
bank the yeast in the United States and provide it to the winery as
needed.
