I recently brewed a Farmhouse Ale with this yeast, and it has since become one of my favorite beers brewed. After doing a little research, I decided to keep the malt bill and the hop additions very basic - 50% Pilsner, 45% Wheat & 5% Flaked corn - 0.5 oz Liberty @ 60 mins, 15 mins & flameout (about 1.048 OG & 14 IBU). After fermentation finished I let the beer sit for a few weeks and then bottled. My first tasting a few weeks after bottling left me very disappointed. It tasted incredibly bland, though crisp and a bit refreshing, but ultimately not that good. I worried why the yeast had not imparted a more "Belgian" taste to the finished product. Anxious, I let another week or so pass before cracking open another bottle. This time - WOW! A wonderful spicy/peppery aroma and taste greeted me on my first sip. I absolutely love it - a great summer beer. I will definitely brew this again next year. My advice to anyone using this yeast is give it time. This yeast won't even taste "Belgian" for the first few weeks, but after that will deliver with amazing results.
