WLP036 is the traditional choice for altbier, but its clean, malt-forward profile also suits kölsch, cream ale, and red ale where hop bitterness should stay in the background. With medium attenuation (65–72%) and medium flocculation, it strikes a balance between a dry finish and manageable clarity without extended lagering. Fermenting cleanly between 65–69°F, WLP036 behaves more like a lager yeast at ale temperatures, so a cooler, controlled fermentation brings out its best malt character.
