Diacetyl (Total) Analysis by GC

  • Purpose:

    Diacetyl is a byproduct of fermentation that is characterized by a buttery, butterscotch-like aroma and slick mouthfeel. Diacetyl levels can vary from strain to strain. A precursor called alpha-acetolactate can be chemically changed into diacetyl from pH changes, oxidation, and temperature. Without yeast to clean up the byproducts, this can cause diacetyl shelf life issues. Diacetyl (Total) will give a total amount of both diacetyl and diacetyl precursor in the product to help anticipate diacetyl shelf life issues.

    Testing: Diacetyl (Total) allows you to measure both diacetyl and diacetyl precursor in the product to help anticipate diacetyl shelf life issues. Results will be a combined value, to determine just the amount of diacetyl precursor, SIT0140 Diacetyl (As-Is) will need to be ordered in conjunction.
