Description

WLP940 Mexican Lager Yeast also performs well in dark lagers, bocks, doppelbocks, Oktoberfest, and Marzen styles, where its clean fermentation profile lets rich malt complexity come through. Minimal sulfur and diacetyl production make this strain forgiving and easy to work with for brewers at all levels.

For best results, ferment at 50–55°F (10–13°C) and hold temperatures steady throughout primary fermentation. A brief diacetyl rest at 60–65°F toward the end of primary helps ensure a clean finish. Follow with a lagering period of 4–6 weeks at 34–38°F to clarify the beer and smooth out residual flavors. Larger batches or higher gravity recipes benefit from a step-up starter to ensure a healthy pitch.

Compared to WLP830 German Lager Yeast, WLP940 finishes drier with less residual sweetness. Unlike WLP840 American Lager Yeast, which tends toward a light apple fruitiness, WLP940 ferments more neutrally — making it a better fit when the grain bill and hops should define the final character.
