I just did 3 batches on the same yeast. Several observations...
As a starter - settled pretty well even without cold crashing. Very surprising.
First Generation (Maibock) TOok off quick. Threw some pretty strong sulphur. Went from 1.069 to 1.022 (Diacetyl rest time) in 8 days. (WOW)
Second Generation (Maibock - same recipe as first generation. OG = 1.068. Almost no sulphur. Dropped just as fast.
Third Generation (Helles Lager) 1.046 NO sulphur. Dropped to 1.015 (Diacetyl rest time) in 5 days. Unreal.
Each batch - even before Diacetyl rest I didn't detect any diacetyl. (I still always do the rest because - why not?)
Each batch tasted pretty darn good when I put it down to lager which is VERY different from other lager strains I have used.
My LHBS doesn't always keep Lager yeast fresh. But, I will make sure to order it in advance next time I plan to do a lager.
