At White Labs, we invest in our quality by testing every lot of yeast produced at all three of our production facilities. Each yeast culture undergoes 61 test points and is only released when all test points have met our strict standards. Through these tests, we have never detected Saccharomyces cerevisiae var. diastaticus as a contaminant in any lots produced at White Labs.
Our Research & Development team is cataloging hundreds of our yeast strains through full genome sequencing and end point polymerase chain reaction (PCR). Some strains used by brewers do contain the STA1 gene. When we identify a White Labs strains with the STA1 gene, we publish the information to the strain description on our website and the Certificate of Laboratory Analysis that is available for all our yeast.
